Pehpeh Chicken

I recieved a call late last night around 11:00pm from an old customer of my now closed restaurant who was craving for his favorite dish- Pehpeh Chicken. Pehpeh chicken which simply translated means pepper chicken is one of many dishes from Sierra Leone, West Africa. Like Portugese roasted chicken and the Jamaica Jerk chicken, Pehpeh chicken goes through a smoking process that seals the juices and flavors leaving an lasting impression on its tasters. A strategic blend of peanut butter, lime juice, habarnero peppers, black pepper, garlic, and other seasonings and spices create the exotic tasting sauce that is used to marinate succulent whole chickens as they smoke under a slow fire to a juicy yet smoke flavored delight.
Some like it spicy and others like it mild. No matter your preference the tale of smoke flavored fingers and utensils conjure a memory that continues to haunt its tasters years after their initial encounter.
